(1) Peel and grate some beetroots.

(2) If you have a freeze-drying machine at home, then freeze-dry the beetroot. This is the best way to ensure the nutrients from the beet remain intact. However, if you don’t have access to a freeze-drying machine, you can make the beet powder in the oven. One caveat with this method is that the high heat will destroy some of the beneficial enzymes and nutrients found in the beets.

If you are using an oven, you can spread the grated beetroot in a thin layer on a baking sheet covered with wax paper. Place in the oven and dry at 40-50oC (104-122oF), turn on the oven-fan and leave the oven door slightly open to allow moist air to escape. It will take 4-5 hours (this depends on how large/small the pieces are). Another convenient way of drying your beet shreds is to use a food dehydrator. Set it at 40-50oC (104-122oF) and dry until they become crunchy. If your oven’s temperature does not have a setting to go this low, then set it at the lowest possible temperature making sure you allow the oven door to remain partially open.

(3) Grind the dry beet shreds in a coffee grinder and sift to remove any larger particles and if you want the pieces to be even finer, you can use a mortar and pestle and sift through using nylon stockings.

(4) Finally keep your beet powder in an airtight container in a cool, dry and dark place. With time, pigments in the powder will oxidize to a yellow-brown color, so you will need to make some new powder.

(5) Now take a scooper and add this to your favorite beverage and enjoy.
